Pulled Pork
Serves 6
Ingredients:
1 kg pork shoulder
2 tbsp tomato ketchup
1 tsp hot English mustard
1 small onion chopped
2 cloves garlic, finely chopped
2cm piece ginger, grated
1 cup tomato paste
1/4 cup apple cider vinegar
1 tsp each cumin and smoked paprika
tbsp chopped chipotles
1/2 cup water
Put pork shoulder in slow cooker.
Mix together all the other ingredients and pour on top of the pork (not around it, actually on top as much as possible).
Put slow cooker on ‘low’ and cook for 8 hours.
Shred pork and mix through sauce.
Serve in bread rolls with coleslaw and pickles.
