Flourless Chocolate Orange Torte
I’ve made my favourite chocolate/orange combination again. But if you want, you can change it up. Make it plain chocolate by omitting the Grand Marnier, orange and marmalade, and add 2 tbsp coffee instead of 1.
Ingredients:
200g dark chocolate (about 60% cocoa)
125g almond meal
150g butter
1 tbsp expresso coffee (including water)
1 tbsp Grand Marnier
zest one orange
5 eggs, separated
2 tbsp orange marmalade
160g caster sugar
1/3 cup cocoa powder

Line and grease a 26cm flan tin.
Preheat oven to 160 degrees C, fan forced.
Melt butter, chocolate, coffee, Grand Marnier and cocoa gently in a large pan. Stir often so it doesn’t stick to the bottom of the pan.
Take off heat and stir through the marmalade.
When cooled slightly mix through the sugar till well combined, then add egg yolks and mix well, then almond meal and orange zest.
Whisk egg whites till firm peaks. Stir one large tablespoon into chocolate mixture to loosen it up. Then fold the rest of the egg whites through the mixture gently with a metal spoon until just combined.
Bake for about 25-30minutes.
Cool in the tin.
To serve dust with cocoa powder and serve with cream, berries or chocolate dipped orange segments.
