Sticky date pudding

The perfect dessert for a cold winter’s evening. The secret to its deliciousness is to drown it in the caramel sauce!

Ingredients:

60g softened butter

3/4 cup caster sugar

tsp vanilla essence

2 eggs

1 1/2 cups self raising flour

cup water

200g chopped dates

tsp bicarbonate of soda

Sauce:

300ml thick cream

1 1/2 cups brown sugar

125g butter

1/2 tsp sea salt

  1. Preheat oven to 160 degrees C fan forced.

  2. Line a 20cm square tin.

  3. Beat butter, sugar and vanilla till light and fluffy.

  4. Add eggs, one at a time, beating well.

  5. Fold in sifted flour.

  6. Place water and dates in a pan and bring to the boil. Remove from the heat and stir through the bicarb.

  7. Pour date mixture into flour mix and combine without over mixing.

  8. Pour into tin and bake for about 30 minutes until springy to the touch.

  9. To make the sauce: combine sugar and cream in a pan and stir over a gentle heat till sugar is dissolved. Stir through butter till melted and mixture is smooth. Stir in salt. Pour generously over slices of the date cake.
