Vietnamese Chicken Salad

Ingredients:

1/2 BBQ chicken, shredded

1/4 Chinese cabbage, sliced thinly

1 cup beansprouts

1 large carrot cut into 3cm batons

1/2 cucumber cut into 3cm batons

1/2 cup coriander, finely chopped

1/2 cup mint, finely chopped

cup salted roasted peanuts

3 spring onions, thinly sliced

Nuoc Cham dressing:

1 tbsp rice wine vinegar

juice 1 lime

1 Thai red chilli, finely chopped

1 tsp sugar

1 tbsp fish sauce

1 clove garlic, finely chopped

  1. Combine all the salad ingredients and toss lightly.

  2. Mix together the sauce ingredients and pour onto salad and toss.

  3. Serve with lime wedges.
