Cherry, white chocolate & almond gluten-free brownies

GF makes 16

Ingredients:

200g dark chocolate (Old Gold original)

90g white chocolate, roughly chopped

1 cup caster sugar

1/4 cup almond meal

1/4 cup cocoa

1/2 cup gluten free plain flour

3 eggs

200g cherries, pitted (or 1 cup frozen cherries)

50g chopped blanched almonds

  1. Preheat oven to 170 degrees C fan forced.

  2. Grease and line a square tin, about 20 x 20 cm

  3. Melt butter and dark chocolate in metal bowl over pan of simmering water, making sure the bowl does not touch the water.

  4. When melted remove from heat and stir in sugar till melted.

  5. Leave to cool slightly then stir through beaten eggs.

  6. Sieve cocoa, almond meal and gluten free flour into mixture. Combine well.

  7. Stir in cherries, almonds and white chocolate.

  8. Pour into tin and bake for about 27 minutes till top shiny and slightly cracked. (a skewer should NOT come out clean - its meant to be a moist fudgy consistency, not cake-like).

  9. Cool, if you can resist, then cut into 16 squares.
