Ingredients:

2 1/2 cups plain flour

1/2 tsp bicarb of soda

1/2 tsp mixed spice

1 heaped tbsp ginger powder

150g brown sugar

1 egg

125g softened butter

1/3 cup golden syrup

24 wooden lollypop sticks

To ice:

No.3 piping tube

plastic bag or piping bag

1 1/2 cups icing sugar

squeeze lime juice

1 egg white

Gingerbread Star Wands

Makes 24

Nothing quite like the smell of gingerbread wafting through the house. Turn up the Christmas music and bake some of these for your friends and work colleagues. Hopefully you can make a better job of icing than I did!

  1. In a food processor mix together dry ingredients till combined.

  2. Beat in butter, then add beaten egg and golden syrup.

  3. Process until it starts to come together. Don’t overmix.

  4. Cover with cling wrap and chill in the fridge for at least one hour.

  5. Roll out dough between 2 sheets of greaseproof paper to about 5mm thick.

  6. Cut out stars with cutter and insert a wooden lollypop stick about 1cm into the bottom of each star.

  7. Place stars on baking paper and chill for an hour.

  8. Preheat oven to 175 degrees C.

  9. Cook biscuits for about 7 mins till golden brown. Leave to cool and harden.

  10. When cool, make icing by mixing together to piping consistency. Place the piping nozzle into plastic bag or piping bag and decorate. Hopefully you can make yours neater than mine! Leave icing to set and then wrap star wands individually in cellophane bags.
