Rocky Road

You could almost say this Rocky Road is good for you- it has so many goodies in it. Mix up the ingredients to suit your tastes. But don’t miss out the salt - it’s what really makes this zing!

Ingredients:

360g milk chocolate

3 x 180g bars dark chocolate

20g pretzels

125g turkish delight

70g pumpkin seeds

50g sunflower seeds

80g pistachios

70g cranberries

100g biscoff biscuits

180g marshmallows

70g salted peanuts

1 tsp sea salt

  1. Melt chocolates in a metal bowl over a pan of simmering water, making sure the bowl doesn’t touch the water. When melted, take off the heat.

  2. Chop pistachios, pretzels, marshmallows, turkish delight, and biscoff roughly.

  3. Dry roast sunflower seeds and pumpkin seeds in a frying pan till just starting to turn golden or pumpkin seeds are popping.

  4. Line dish, 19 x 28cm, with greaseproof paper.

  5. Put all the dry ingredients into a large bowl and pour the melted chocolate over them. Mix well, then pour into the lined dish. Sprinkle the top with some more sea salt. Refrigerate till set.
