Spiced Parmesan Biscuits

These are good to serve on a platter or wrap up and gift. Great with cheese or pate, or just on their own. You could use different cheese - a blue or Comte- and could use different herbs and spices. Also really good with rosemary.

Ingredients:

1 1/2 cups plain flour

3 tbsp SR flour

10 turns each of sea salt and black pepper

1 tsp ground cumin

1 tsp harissa powder or hot paprika

100g grated parmesan

180g unsalted butter

juice of 1/2 lemon

cold water - about 1 -2 tbsp

  1. Put all the dry ingredients into a food processor. Put in chunks of cold butter and whizz till mixture is like breadcrumbs.

  2. Mix through parmesan, then lemon juice. Add enough water to just bring the mixture together with your hands.

  3. Roll out into a log and wrap in greaseproof paper.

  4. Chill for 2-3 hours.

  5. Cut 5mm slices and place on lined baking tray.

  6. Cook on 175 degrees C for about 15 minutes till golden brown. Cool on the tray.
