Hummus
Ingredients:
4 cloves garlic
420g tin chickpeas, drained
tsp sea salt
2 dessertspoons tahini
1/2 cup olive oil
1/2 tsp smoked mild paprika
juice one lemon
Wrap the unpeeled garlic cloves in foil and bake in a 180 degree oven for about 15 minutes till soft.
Put the tin of chickpeas, tahini and squeeze out the garlic pulp into the food processor and blitz till well combined.
Add the lemon juice, salt, paprika and enough olive oil to make it a smooth consistency. Taste and add more lemon juice or salt if needed.
Serve with some extra olive oil in the centre and a sprinkling of paprika.
